It’s fig season right now. Try these light and low on sugar muffins that reveal the subtle yet distinctive taste of figs.
Apple fig muffins (makes about 8 muffins)
5oz (150g) apple sauce
3 figs, peeled and mashed
2oz (60g) sour cream
1 tbsp brown sugar
1/2 tsp baking powder
zest and juice of 1 lemon
6.5oz (180g) spelt flour
1/4 cup sunflower seeds
Preheat the oven to 350 degrees. Place the applesauce in a large bowl and mix in the figs, sour cream, sugar, lemon juice and zest. Add the flour and baking powder and mix well to combine. Pour the batter in a greased muffin pan. Sprinkle with the sunflower seeds and bake for 20 to 25 minutes. Serve the muffins by themselves or with a dollop of yogurt or sour cream.
