This is a delicious fruity summer dessert that everyone in your family will love. The combination of ladyfingers, vanilla sauce, cream and fresh fruit compote is hard to beat. Prepare it for your next summer party and you are sure to get lots of compliments.
Rote Else (serves 10 to 12)
1 packet ladyfingers
2 cups vanilla custard
1 1/2 cups heavy cream, whipped
1 cup sour cream
2 tbsp icing sugar
1 tbsp vanilla essence
3 cups Rote Gruetze
1/2 cup almonds. slivered and toasted (optional)
Place the ladyfingers in a 9×12 inch serving platter (needs to be at least 2.5 inches high). Pour over the vanilla custard and allow to set for a few minutes. Meanwhile, mix the whipped cream, sour cream, icing sugar and vanilla essence and spread gently on top of the ladyfingers vanilla custard layer. Next, spread a layer of Rote Gruetze. Refrigerate for at least an hour. Sprinkle over the almonds just before serving.
To make the Rote Gruetze:
1 1/2 lbs mixed red berries (strawberries, raspberries, blackberries, blueberries)
2 tbsp corn starch
1 cup cranberry juice, divided
2 tbsp brown sugar
Mix 4 tbsp of the cranberry juice with the corn starch and set aside. Bring the remaining juice and sugar to the boil, add the berries and the corn starch mixture, and while stirring, allow to come to the boil again. Remove from the heat, pour into a bowl and allow to cool completely.
