I’m a veggie lover but have to admit that I’ve never been a big fan of veggie burgers UNTIL I concocted this recipe. We all know that quinoa is good for you with its abundance of protein and fiber but that it can taste that good?!? The quinoa gives this burger its crunchy texture while the veggies and herbs keep it moist. And with all your favorite toppings and condiments you won’t miss the meat at all. Give it a try and let me know what you think!
Veggie quinoa burgers (makes 4 to 6 medium sized burgers)
1/4 cup (40g) quinoa
1/2 cup (125ml) vegetable stock
1x 15oz (400g) can black beans, rinsed and drained
1 medium sized carrot, coarsely grated
1/2 red bell pepper, chopped
1 clove garlic, minced
1/4 cup (40g) fresh whole wheat bread crumbs
2 tbsp fresh parsley, chopped
2 tbsp fresh cilantro, chopped
2 tbsp chives, chopped
sea salt and cracked black pepper
1 egg
2 tbsp olive oil
4 to 6 whole wheat hamburger buns
lettuce, tomato slices, avocado slices, cheddar slices and your favorite burger condiments
Place the quinoa and vegetable stock in a small sauce pan and bring to the boil. Reduce the heat, cover and allow to simmer until all the liquid is absorbed, about 8 minutes. Remove from the heat and set aside.
In the meantime, place the beans in a large bowl and coarsely mash with a potato masher. Add the carrot, red pepper, garlic, bread crumbs, herbs, salt, pepper, egg and cooked quinoa and mix until well combined.
Shape the mixture into 4 to 6 medium sized patties and set aside.
Heat the oil in a large non stick pan over medium heat. Cook the patties for about 5 minutes each side until golden brown. Assemble the burgers and buns and serve with your favorite toppings and condiments.
