Fish, cucumber, mustard and dill just go together marvelously. Smoked salmon works just as well in this quick and easy recipe but I prefer the subtler taste of smoked trout. Especially when you are trying to get your kids to give smoked fish a try.
Whole wheat pasta with cucumber and smoked trout (serves 4)
13oz (370g) whole wheat pasta (penne or rotini)
1 large European cucumber, peeled, seeded and cubed
8oz (230g) smoked trout fillet, skinned and flaked
1 bunch spring onions, finely sliced
1 cup (250ml) white wine
1 cup (250ml) vegetable stock
1 cup (250ml) cream half & half
1 tbsp lemon juice
1 tbsp whole grain mustard
2 tbsp fresh dill, chopped
a pinch of nutmeg
sea salt and cracked black pepper
Bring a large pot of water to the boil and cook the pasta al dente or to your liking. Drain and set aside.
Meanwhile, in a large non-stick pan bring the stock and wine to a boil, add the cucumber and allow to simmer for 2 to 3 minutes. Add the cream, lemon juice and mustard and leave to simmer until slightly reduced and creamy. Season to taste with nutmeg, salt and pepper. Stir through the spring onions, trout flakes, dill and pasta and allow to warm through. Ready to serve!
