We absolutely LOVE pesto in our family. It’s so quick and easy to make, yet very flavorful. This one with its fresh lemon taste captures the essence of delicious summer cuisine. Enjoy it with freshly cooked pasta or as a spread on slices of ciabatta topped with sun ripened tomatoes. So good!
Zucchini pesto (serves 4)
1lb zucchini, thickly sliced
1/2 cup fresh mint
1/2 cup fresh basil
1/3 cup almonds, slivered
1 clove garlic, crushed
zest and juice of 1 lemon
about 1/2 cup good quality olive oil
1/2 cup pecorino, grated
sea salt and cracked black pepper
Place the zucchini, mint, basil, garlic, almonds, lemon zest and juice in a food processor and turn on. While the machine is running slowly add the olive oil until the mixture has reached the desired consistency. Season to taste with salt and pepper and stir through the pecorino. Serve with freshly cooked pasta and some extra pecorino on the side.
